Declaration of the Cart
Ramen is soul food.
My soul is one, and therefore, my ramen is of only one kind.
This single bowl is the relentless pursuit of what I believe to be truly delicious; I do not aim to please the masses.
Perhaps out of a hundred people, ninety-seven will score it a zero.
Even so, I am aiming for the perfect score from the remaining three.
A ramen meant “for everyone” is nothing more than mediocre.
Furthermore, soul food must be made by human hands, for human beings.
If a person comes to eat, a person should welcome them.
These days, many places let machines do the interacting, which is utterly out of the question for me.
And the price must remain modest enough for anyone to drop by casually.
A Yatai (ramen cart) is the ultimate form of a shop to truly experience ramen.
A perfect bowl of ramen does not exist inside a climate-controlled room.
It arrives under the freezing, open sky, when you are hungry to the bone.
There is a ramen so exceptionally delicious that it makes you profoundly grateful to be alive.
That is the single bowl I wish to serve you.

開台の辞
ラーメンはソウルフードである。
私のソウル（魂）は一つなので、ラーメンも一種類だ。
その一杯は私がうまいと思うラーメンを追求したもので、万人受けは狙っていない。
ひょっとすると１００人が食べて９７人が０点をつけるかもしれない。
それでも残りの３人が付ける満点を狙いたい。
「誰が食べてもおいしい」はそこそこおいしい止まりだ。
またソウルフードは人が人のために作るものだ。
人が食べに来るなら人が相手をすべき。
昨今は機械に相手をさせる所が多いが論外だ。
値段も気安く寄れる位でなければならない。
屋台はもっともおいしくラーメンを食べられる店の形だ。
空調の効いた室内に最高のラーメンはない。
空腹な寒空の下にそれはやってくる。
生きててよかったと思う程うまいラーメンは存在する。
私はそのような一杯を提供したい。
